Crumbled Blue cheese Olive oil Red wine vinegar Salt and pepper to taste Procedure: 1. Peel and core the pears. 2. Arrange the pears in a sauce pot and cover with port. 3. Over high heat bring the port to a simmer, reduce the heat and simmer for 25-30 minutes or until soft. 4. Remove the pears and chill for 25 minutes. 5. Over high heat, reduce the port till a syrupy consistency has been achieved. Approx 15-20 minutes. Check on the reduction frequently. 6. Once syrup consistency has been achieved, remove and chill. 7. Slice the chilled pears. 8. Combine the arugula, radish, and cheese. Season with olive oil, red wine vinegar, and salt and pepper. 9. Arrange the salad and serve.
