What You'll Need --------------------------------------------------------------------- 3 medium eggs* 1 tbsp zucchini, chopped * 1 tbsp sun-dried tomatoes * 2 tbsp onion, chopped * 1 tbsp red pepper * 1 tbsp goat cheese * 1 tbsp olive oil * 1/2 tbsp butter * 1/4 cup half & half * Salt and pepper to taste * Basil to garnish * Nonstick frying pan * Large bowl * Spatula * Whisk Preparation --------------------------------------------------------------------- Preheat broiler on high heat.2. Set burner to medium. Heat nonstick frying pan. 3. Add olive oil to frying pan. Spread it around so that it covers the entire surface of the pan. 4. Add butter to pan and let melt. 5. Pour eggs into the large bowl with half-and-half and whisk. Add salt and pepper to taste (optional). Cooking Process --------------------------------------------------------------------- After butter has melted, add onions to the frying pan. Spread them around and let them cook for 1 minute.2. Add the zucchini and red pepper to the pan. Let cook for another minute or two. 3. Pour egg mix into the frying pan, then add sun-dried tomatoes. Move the eggs around so they all get cooked evenly. Cook for 1 minute, then add goat cheese. Add the basil leaves last, then move your spatula around the edges of the eggs to make sure they aren't sticking to the pan.5. When the egg is almost cooked and very little liquid is left, remove the pan from the burner and place it under the broiler (or in the oven). Let cook for 1-2 minutes. 6. Flip the frittata by placing a plate over the frying pan and turning the plate and frying pan over at once to let the frittata fall out of the pan and on to the plate. Serve and enjoy.
