This is my go-to for brunch, here's the recipe for you all For the Creamy Mushrooms -200g mushrooms - 1/2 red onion - 1 clove of garlic - sprinkling of dried oregano - sprinkling of dried thyme - 1 tablespoon of plain yoghurt (I used coyo) - Olive oil - Salt and pepper For the tofu - 1 white onion - 2 cloves of garlic - a handful of spring onions - 1 fresh chilli - 1 tablespoon of tamari - 1 teaspoon of ground turmeric - 1 teaspoon of smoky paprika - 1 block of firm tofu - Olive oil - Salt and pepper Method 1. Chop onions and garlic for both, let them heat in separate pans with olive oil and salt until soft 2. Chop the fresh chilli, spring onions and mushrooms. Add the mushrooms to the mushroom pan and the chilli and spring onions to the tofu pan 3. Add the tamari, and spices a few minutes later 4. Add the thyme and oregano to the mushroom pan 5. Crumble the tofu in and stir well 6. Add the yoghurt to the mushrooms 7. Eat it all! An easy vegan breakfast or brunch, so delicious and so quick too.
