It's the perfect way to marry your favorite breakfast foods with an insanely delicious breakfast hack that's perfect for anyone who loves all things tasty. It's like all your favorite things, together at last! Pancake Bacon From Nicole Iizuka, POPSUGAR Food INGREDIENTS 8 slices thick cut bacon 4 cups pancake batter Maple syrup DIRECTIONS Heat skillet or griddle to a medium high heat and cook bacon until fat is rendered and bacon is crisp. Remove bacon and place on a paper towel lined plate to let excess fat drain off. Clean skillet or griddle and spray with cooking spray. Heat to medium high heat and place cooked bacon strips back on the cooking surface. Pour pancake batter around the strip of bacon, about 1/2 a cup per slice of bacon. When little bubbles start to form at the edges of the batter, flip the pancakes and cook the other side until golden brown. Serve warm with maple syrup.
