Aloo Kulcha is my all time favorite stuffed kulcha. This is a whole wheat kulcha with very little maida. So here is the ingredient list and procedure. Ingredients : - Wheat flour (atta) (1 Cup) (https://amzn.to/2mpbGy4) - All purpose flour (maida) (1/2 Cup) (https://amzn.to/2mmIhEA) - Baking powder (1/2 Tsp) (https://amzn.to/2JYlKvm) - Baking soda (1/4 Tsp) (https://amzn.to/2lrWHTo) - Sugar (1 Tsp) - Salt to taste - Soft butter (1 Tbsp) ( More to brush the and form layers of dough ) ( I have used Amul Butter ) - Yogurt/ Dahi (2 Tbsp) - Warm water ( as required ) Potato Filling : - 2 Potatoes ( boiled ) - Fresh Coriander (2 Tbsp) - Cumin powder (1/2 Tsp) (https://amzn.to/2JvpOPh) - Coriander Powder (1/2 Tsp) (https://amzn.to/2LsnE4A) - Dry mango powder/ amchur powder (https://amzn.to/2mlZQod) - Red Chilli Powder (https://amzn.to/2NjPrF8) - Salt & pepper - Grated Ginger (1 Tsp) While rolling : - Onion Seeds (https://amzn.to/2moDKRS) - Sesame Seeds (https://amzn.to/2mmkQLF) - Fresh coriander Procedure : - In a bowl add wheat flour, all purpose flour, baking powder, baking soda, sugar, salt and butter. - Use softened butter to ease all the process - Mix the butter in the flour. - Add yogurt and warm water - Knead to make a soft dough - Rest it for 20 - 30 min - For filling mix all the ingredients and keep it aside. - After the dough has rested, flour the surface - Roll out the dough and form a rough rectangle - Apply thin layer of butter - Sprinkle flour - The process with separate layers - Fold the sides ( like in puff pastry ) - Repeat the process for 3 - 4 times - This will form nice layers - Now divide the dough - Roll a rectangle and add filling - Seal it properly - Put some onion seeds, sesame seeds and fresh coriander - Roll it out ( no too thin ) - Flip it - Apply water ( so that it sticks to the tawa ) Tip : Use some old tawa so that it sticks properly - Put the kulcha on tawa ( water side down ) - Flip the tawa and put the flame on high - Cook it further more to let the under side cook well - Apply some more butter - Serve it hot with your favorite veggie/ sabzi The above amazon links are affiliate marketing links.
